Soya beans are vegan friendly and can be used in many ways as a vegan protein source in recipes in the same way as chickpeas. Rehydrate before cooking.

1. Soak for 8-10 hours or overnight.
2. Put soaked beans into a pan, cover and bring to a boil.
3. Simmer for 3-4 hours or until tender, add more liquid during cooking if necessary.
4. Cool and serve.
